Coconut Cupcake

Mmm... So Yummy! and Moist!! You gotta try them!

Coconut Cupcakes

3 eggs
1 cup sour cream
1/2 cup water
8.5 oz can of cream of coconut or coconut milk
1/2 tsp vanilla
1 white cake mix
small box of instant coconut pudding

Beat all wet ingredients, until well mixed. Add all dry ingredients. Bake at 350 for 18-20 minutes. I usually frost them with a cream cheese frosting and then you can sprinkle them with shredded coconut if you would like.

Today was the egg drop... Brannon was assigned to bring an egg to school protected by anything he wanted and put in a container, no larger than a shoe box. The teacher got on the roof of the school and dropped every class member's egg off to see who's would survive..... and guess who's did? Yep, Brannon's egg made it! He came home all happy that his egg didn't break, but decided to break it on his way home! I'm glad his egg made it! He was real disappointed during the pine wood derby when his car was the slowest one out there. He told Coby, thanks a lot dad, it's all your fault!! LOL

I'm still sick to my stomach!

   Today, I viewed a video on facebook about a 6 month old girl who was physically and sexually abused to DEATH! What the freak is wrong with people? I just don't get it! I was literally bawling while I was watching this video. The news in New Mexico, I think that was were it was, decided they wanted to post the pictures of this little girls bruised lifeless body, to show the public that child abuse is a real issue! 
   The rest of my day, this story has haunted me! I was at the grocery store, by myself, waiting for my deli meat and this video popped back up in my head. I started to tear up in the grocery store!! I was thinking, Oh please don't let the tears start flowing down my face! It was the saddest thing I've seen in a long, long time! Why?? What draws individuals to commit such horrific crimes? I just don't get it!!

New school year!



For the last few years, Brannon has been attending a small private school in America Fork Utah. This year we have decided to put him in the local public school. That was a hard decision! and one that I actually got a little teary-eyed over! Are we making the right decision??? Well, school has finally started and it looks like it will be a great year. I'm excited for Brannon and his new environment! lol.... He just keeps saying I can't believe this school can afford all those Mac computers. We walked past the computer lab and their were about 30 new Mac computers in there. He thought that was pretty cool, along with the fact that his new teacher is a man!  This is a huge change for all of us and hopefully a good one!
